Fresh oysters shouldn’t be saved for white tablecloths and fancy degustations. They belong at your barbecue, your birthday, your backyard shindig.
Every holiday I’ve planned for the last ten years has started with the ocean, and more specifically, the regions that grow oysters. In 2025 and 2026 I was lucky enough to caravan around parts of Australia, and one place kept pulling me back: Coffin Bay, where I ate as many oysters as physically possible.
Hands down, that region produces the tastiest oysters I have ever eaten. An obsession like that doesn’t stay on holiday, so I brought it home.

Our oysters go straight from the supplier to your door. No stops in between, no sitting around. That’s how you get the freshest oysters in Perth.
Once shucked, each oyster gets a very quick dunk in fresh water to clear any shell debris. You might hear that’s a crime among shuckers. It isn’t. The dunk is drained off immediately, and there’s enough residual salty sea water in the oyster to refill the bottom of the shell as it relaxes. Absolutely no compromise on flavour.
Coffin Bay, in my humble opinion, grows the best oysters in Australia. The region and the shape of the bay itself make its Pacific Oysters taste so sweet, so salty, so full of incredible minerality, and the perfect one-bite size. Around 18 months in the water seems to be the sweet spot.
There are far too many other amazing oysters to mention, but these four have earned a permanent spot on my favourites list.
Clean, crisp and sweet, with a fresh briny finish. South Australia’s finest, and a perfect single bite.
Plump, clean, sweet and delicious. Larger than a Coffin Bay oyster, but still manageable as one bite.
Plump and salty, grown in crystal clear waters. Large, delicious oysters.
Small, sweet and delicious, with a slightly tinged colour and a deep hull to the shell.
Small, dark and sweet. Less time in the water so barely a bite in size, but very satisfying indeed.
